Beets for Breakfast?! You bet! This blueberry beet smoothie is a creamy, sweet way to start your day with veggies and fruit that will give you an energy boost for a great morning!
I've developed quite a fascination with beets over the past few months. There are so many ways I still want to try making them, but I just can't seem to move on from using them in smoothies. I think I've had beet smoothies more days than not so far this year, and I'm still not tired of them at all! I look forward to these tasty smoothies, and this week finally decided to add a second version to the blog. The first beet smoothie I made had apples and cinnamon, which is so good! (If you missed that recipe, check it out here). This time, I decided to use blueberries to change it up a bit, and it came out very creamy with a beautiful deep pink color.
With the rich coloring of both beets and blueberries, this smoothie is packed with disease-fighting antioxidants. And if you take the time to blend this smoothie for at least one full
minute, it will actually hold really well in the refrigerator. That means you can make it the night before so it will be ready for breakfast in the morning, or drink half of it one day
and save the rest for the next day. Blending smoothies until they're completely smooth might sound obvious and kind of silly, but it is one of the most overlooked and best ways to make
sure they taste amazing and actually hold without separating or turning weird colors. Try setting your timer for a minute next time you make a smoothie and notice the difference from a
smoothie that was only blended for 10-20 seconds. It really works ;)

Blueberry Beet Smoothie
Makes 1 smoothie
- 1/2 cup sliced cooked beets (use "No Salt Added" if using canned beets)
- 1/2 cup frozen blueberries
- 1/2 banana
1/2 cup water (can use 1/4 cup water + 1/4 cup 100% apple juice for sweeter smoothie)
- 1/2 cup plain Greek yogurt
Place all ingredients in a blender and blend at least one minute or until the ingredients are completely combined and the
smoothie is creamy.
