Hi, I’m Amber! I’ve got a true passion for nutrition, eating well, cooking, and sharing this knowledge with others! I am from the lovely city of San Antonio, Texas. I have a Bachelor and Master’s Degree in Nutrition, and am a Registered Dietitian Nutritionist (RD/RDN).

 

Over the past several years, I’ve gained to be what I consider a really special set of nutrition skills.  I started out working in a community setting that allowed me to go out and teach nutrition classes to people of all different ages, from small children through senior citizens, which I loved! I continued that for a while after becoming a dietitian, then had the very unique opportunity to work for a weight loss resort.  For the past two years, I’ve been working with people from all over the world who come to participate in the weight loss/fitness program, and I’ve been busy doing all sorts of things there!  I've been planning menus, overseeing the food that clients eat on the program, teaching multiple nutrition and healthy cooking classes every week (I have taught hundreds of nutrition and cooking classes!), creating individualized nutrition plans, and even making some fun live TV appearances, writing articles online, and some radio interviews.

 

My specialties include nutrition education/group presentation, weight loss coaching, teaching truly useful and life-changing menu planning skills that work for anyone, healthy cooking, and more! I’ve also had the privilege of  working with the Wounded Warrior Program over the past year, and love teaching nutrition classes and meeting one-on-one with some really special veterans.  On the side, I am the Food Editor for Nanny Magazine.

 

As I mentioned, I love to cook! Being in the field of nutrition, my main goal is to eat food that is both good for my body and also tastes delicious, so I work hard to create and transform recipes to be tasty and healthy. I’ve found some tried-and-true methods to lighten up foods without sacrificing the flavor and quality of the dish.  I spend a lot of time experimenting in the kitchen and testing my creations on my brave husband (trust me, not everything comes out great on the first try!) I also love taking pictures of the recipes I create and of food in general.  I plan to share plenty of recipes, along with pics and how-to’s on my blog, so stay tuned for more!

 

When I'm not doing all things nutrition/food related, I enjoy running (I've got two half marathons under my belt so far!), traveling, outdoor stuff like hiking and kayaking, tending to my tiny backyard garden, and reading.
