Pumpkin pie in the form of a healthy smoothie? You bet! Just in case there isn't enough pumpkin in your fall menu, here's a healthy pumpkin pie protein smoothie that's the perfect start to any fall morning!
The inspiration for this smoothie came from all the extra pumpkin I have on hand from making a whole bunch of pumpkin recipes for the blog, my recent TV cooking segment, and for my family...So. Much. Pumpkin! Luckily it's one of those ingredients I don't get tired of too easily since I love it. :)
So if you find yourself in the same boat as me and are left with some extra pumpkin from making pumpkin pie or other pumpkin recipes for Thanksgiving, this recipe is just the thing! It's also got several ingredient options so you can customize it based on what you like or have on hand.
If you're looking to add a real boost of protein to this smoothie, you can add a scoop of natural protein powder, but there's already a nice serving of protein even without it. I used oats to add a mild nutty flavor and some whole grain goodness (yay fiber!), and chia seeds for even more fiber, protein, and heart-healthy fat.
And if you're a fellow lover of all things pumpkin, here are a few other tasty pumpkin treats I've made on the blog you might enjoy:
