I recently had the pleasure of teaching a nutrition class on one of my favorite topics:  healthy snacks.  I'm always looking for different twists on my favorite snacks to make them more interesting, so during this class I decided to do something I don't often do during a class or cooking demo - I decided to do a recipe experiment on the class and crossed my fingers that it would come out good.  Lucky for me, this recipe went over extremely well - everybody absolutely loved it!  Whew ;) 

And my favorite part about this recipe is that it's not only delicious, but it's really, really easy to make.  Like so easy I kind of feel silly writing up the recipe for it.  But I wrote it up anyway so that it will be easier to portion it out correctly.  :) 

 

I think sometimes beauty is really found in simplicity, so I hope this cozy fall-flavored treat will become a breakfast or snacking staple this season at your home just like it has for me!

Pumpkin-Spiced Yogurt with Cherries and Pumpkin Seeds

Makes 1 entree serving (or 2 snack servings)

 

Ingredients:

  • 3/4 cup (6 ounces) vanilla Greek yogurt
  • 1/8 teaspoon pumpkin pie spice (or more to taste)
  • 2 tablespoons chopped walnuts
  • 2 tablespoons unsalted pumpkin seeds
  • 2 tablespoons dried cherries

 

Directions:

1.    Place the yogurt and pumpkin pie spice in a small bowl and mix to combine.  Top with the walnuts, pumpkin seeds, and cherries, and serve!
